Slow-fermented, deep heat
Fresh-picked Wayanad pepper berries, brined and slow-fermented in earthen jars for fourteen days before sun-drying. The fermentation softens the raw piperine bite into a deeper, miso-adjacent umami — sharp still, but rounded, with a longer finish. A small-batch experiment from the cooperative.
