The story
Thina — foxtail millet — grown rain-fed on the dry-belt smallholdings of Palakkad. Single-pass de-husked to keep the bran and germ, with the slow-release carbohydrate profile that made it a diabetic-friendly staple long before the term existed. Cooks like rice, holds its bite, and pairs well with Kerala curries.
