The story

Panivaragu — proso millet, one of the oldest cultivated grains on the subcontinent — grown rain-fed in Palakkad. Quick-cooking, lightly nutty, and notable for its magnesium and slow-release carbohydrate profile. A useful daily grain for those moving away from polished rice for cardiovascular reasons.
